 on making vegetable stock

The cooked peelings can go in the compost heap, to appear again on the next turn of the Wheel of Life. There is something rich and satisfying about being thrifty and ecologically sound, just as the smell of food cooking is my favorite part of working in the kitchen. I call it enjoying the soul of the food.
